Throughout Japan, crop damage from deer is a problem in satoyama (traditional agricultural landscapes), and many wild deer also inhabit our village. We want to transform the "challenge" presented by these local deer into the "value" of nature nurtured by the satoyama. We will do this by obtaining hunting licenses ourselves, capturing wild deer, and carefully butchering and processing the meat at local facilities. Our aim is to deliver delicious ingredients that will adorn your dinner table.
Minced deer meat, which captures the natural flavor of the venison, is easy for those new to gibier to use and is ideal for a wide range of dishes.
We have recipes using this product. Please see our Stories Recipes.
Precautions
Please thaw in the refrigerator.
Thawing rapidly can cause drip to leach from the meat, affecting flavor and texture. By thawing in the refrigerator, you can minimize drip and enjoy the meat in its best condition.
We raise our chickens on a fermented feed made directly from local rice, vegetables, and other ingredients, then use the chicken manure as fertilizer for new crops, building resource circulation and a shared landscape starting from poultry farming.
