We want you to first enjoy the original taste of the eggs we proudly raised by eating them raw. To that end, we have developed an original dashi soy sauce specifically for tamago kake gohan (egg over rice) that brings out the best in our ten-ten eggs.
With the help of Yamakawa Jozo in Gifu Prefecture, we created a soy sauce based on traditionally brewed tamari soy sauce made with Gifu-grown soybeans in wooden barrels, enhanced with bonito flakes from Yaizu and kombu dashi from Hokkaido. The clean flavor of the eggs is complemented by the fragrant soy sauce and the mellow dashi, making it a perfect match for tamago kake gohan.
We raise our chickens on a fermented feed made directly from local rice, vegetables, and other ingredients, then use the chicken manure as fertilizer for new crops, building resource circulation and a shared landscape starting from poultry farming.
