We minced parent chickens of the purebred Japanese "Goto Momiji" chicken breed, which are raised in a free-range environment where they can roam freely within the chicken coop without cages, and are fed a self-formulated fermented feed centered on unused local resources such as rice, wheat, and vegetables.
Compared to the commonly eaten meat of young chickens, the meat of parent chickens is characterized by its firm texture and rich umami flavor.
*Both hens and roosters are used as parent birds.
We raise our chickens on a fermented feed made directly from local rice, vegetables, and other ingredients, then use the chicken manure as fertilizer for new crops, building resource circulation and a shared landscape starting from poultry farming.
